Grain-Free Bread

Chinese Medicine practitioner, Nadine Hennequin, shares her insight on how to make your own grain free bread that is high in fibre and promotes good digestive health.

Step One;

Measure the following ingredients into a jar;

  • 1 cup (135g) of sunflower seeds

  • 1/2 cup of coconut flour

  • 4 tablespoons of sesame seeds

  • 4 tablespoons of psyllium husks or 3 tablespoons of psyllium husk powder

  • 2 tablespoons of chia seeds

  • 1 teaspoon of fine sea salt

  • 1 teaspoon of ground cinnamon

Give the jar a shake then throw the ingredients into a large bowl.

Step Two;

Add the following ingredients into the bowl;

  • 2 eggs

  • 3 tablespoons of melted butter, ghee or coconut oil

  • 1 tablespoon of honey or maple syrup

  • 1 cup of water

Step Three;

Stir all of the ingredients to combine and then transfer into a loaf baking tin or pyrex lined with baking paper.

Step Four;

Bake at 175 degrees celsius with fan force for 40 minutes.

Step Five;

Cool thoroughly and store in the fridge for up to five days. Alternatively you can slice and then freeze with grease proof paper between each slice.

Put on your favourite topping to have as a high fibre breakfast or snack, or have a slice to accompany a meal.
